Sick-O!

Good Morning!
Nothing like a sick kiddo to start your morning!  Thought I'd take this opportunity to post the yummy yummy soup recipe from last week!

Taken from Eat, Shrink and Be Merry by Janet and Greta Podleski

Heat 1 T olive oil or butter in a soup pot and saute 2 C sliced leeks and 2 t minced garlic until leeks begin to soften. Stir in 4 C small cauliflower florets, 1 1/2 C peeled/cubed sweet potato, 1 1/2 t curry powder and 1 t cumin.  Cook and stir for one more minute.  Add 4 C broth, 1/2 t salt, 1/4 t pepper.  Bring to boil.  Reduce heat, cover and simmer 12-15 minutes, until veggies are tender.

The recipe then calls for you to transfer 1/2 soup to a blender but I use my immersion blender and give it a couple of zhuzhes.  

Stir in 1 C cooked brown and wild rice blend, 1 C evaporated milk and 1/2 C shredded light swiss cheese.  Heat for one more minute and serve hot!

Yummmmmmy!!!
